True Belgian Waffles

This blog is quickly turning into a recipe blog.  😉  I found this recipe a few nights ago for “Sunday Night – Breakfast for Dinner” night.  Never had I eaten waffles without syrup, but this recipe is sweet enough that it’s not required.  I like my waffles with dinges (Belgian for “stuff” or “toppings”).  My favorite “dinges” are whipped cream and fruit.  But others like all kinds of dinges like chocolate syrup, fruit, whipped cream, nuts, etc.  Inspired by the Wafels & Dinges food truck from the TLC Show “Best Food Ever,” we sought out to find the best Belgian Waffle recipe.  And I think we accomplished that goal.  Whether it’s a “true” Belgian Waffle recipe, I don’t know.  But it is might tasty.

They are so tasty that I made them for our Guys’ Night – BCS Championship Game Night.  My friends originally laughed at me last night when I told them that I would be making waffles at halftime.  My friend Marcus was sure to give me grief.  With a sideways glance and a sarcastic grin, he muttered, “Waffles & Football.  Cuz, you know, those go together.”  We all had a great laugh at my expense, but as halftime approached, I started making these bad boys.  The first 2 out of the waffle iron went to Marcus.  He took one bite and his eyes lit up as he said, “These have sugar in them!”  It was downhill from there.  Even Marcus’s brother, Chris, said, “I just started a diet.  Don’t make me any.”  To which I responded, “Well, I’m gonna make up the whole batch.  If you don’t want one, don’t eat one.”  Marcus gave Chris a bite of his.  Long story short, Marcus had 4 waffles, Chris had 2 and everyone agreed that “Waffles and Football Night” should become a tradition.

True Belgian Waffles Recipe

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 3-1/2 teaspoons baking powder
  • 2 eggs separated
  • 1-1/2 cups milk

  • 1 cup butter melted
  • 1 teaspoon vanilla extract
  • Sliced fresh strawberries or syrup

Directions

  1. Directions In a bowl, combine flour, sugar and baking powder. In another bowl, lightly beat egg yolks. Add milk, butter and vanilla; mix well. Stir into dry ingredients just until combined. Beat egg whites until stiff peaks form; fold into batter.
  2. Bake in a preheated waffle iron according to manufacturer’s directions until golden brown. Serve with strawberries or syrup.
